Fudgy banana chocochip round brownies (stove-top baked)
My ingredients:
1 1/2 cups white sugar
1 1/8 cups all-purpose flour
3 tablespoons cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon iodized salt
1/2 cup melted margarine
2 large eggs
1/2 cup mashed overripe table top bananas
My method:
*In a mixing bowl, combine melted margarine, white sugar, mashed bananas and cocoa
*Add in flour, baking powder and salt
*Mix well with wire whip or fork
*Add eggs and mix thoroughly (it's okay to overmix :).
*Transfer in 8" round baking pan and bake in pre-heated oven for 20 minutes or until cooked.
*Tip:Cover with aluminum foil before baking to preserve a bit of moisture.
My stove-top baking experiment that worked:
Since I have no oven in my home, I tried this shot to the moon technique and unexpectedly, the brownie turned out to be a success :)
*I used the same round baking pan to put the mixture in, then I preheated a large cooking pot (with a stainless steel round wire rack in it) on the stove. I then placed the baking pan on the rack and covered the pot with a cloth first, then the lid. I set the stove to very low fire and after 45 minutes, voila! My very first stove-top baked brownie came out way better than expected.:).
